Prepare the Beans
Rinse the dried white beans under cold water and soak them overnight in a large bowl of water.
Cook the Beans
Drain the soaked beans and transfer them to a pot. Add vegetable broth, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer until beans are tender, about 1-1.5 hours. Remove bay leaves.
Sauté the Vegetables
In a separate large skillet, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Sauté until the vegetables are soft and fragrant, about 5-7 minutes.
Combine and Simmer
Add the cooked beans to the skillet with the sautéed vegetables. Stir to combine and simmer for an additional 10-15 minutes. Adjust seasoning with salt and pepper.
Prepare the Crostini
Preheat the oven to 400°F (200°C). Arrange sliced baguette on a baking sheet. Brush with olive oil and sprinkle with salt. Bake until golden brown, about 5-7 minutes.
Serve
