Cocktail

Method

Cocktail

  1. 1

    Chill glass

Place a martini (coupe) glass in the freezer or fill it with ice water to chill while you build the cocktail.

  2. 2

Add the añejo rum (2 oz), blanco tequila (0.5 oz), sweet vermouth (0.5 oz), fresh lime juice (0.75 oz), passion fruit purée or juice (0.5 oz), agave nectar (0.25 oz) and 2 dashes of orange bitters into a cocktail shaker.

  3. 3

Fill the shaker with ice (about 1 cup or enough to nearly fill the shaker).

  4. 4

Shake vigorously for 12–18 seconds until the exterior of the shaker is very cold and the liquid is well-chilled and slightly diluted.

  5. 5

Dump the ice or remove the martini glass from the freezer. Double-strain the cocktail into the chilled martini (or coupe) glass using a Hawthorne strainer and a fine mesh strainer to remove any small ice chips and passion fruit pulp for a clean presentation.

  6. 6

If desired, express the oils of the dehydrated orange wheel or fresh lime wheel over the surface by holding the peel over the glass and giving it a quick squeeze, then drop it onto the drink.

Garnish

  1. 7

Garnish with one dehydrated orange wheel or lime wheel on the rim or floated in the glass.

  2. 8

Optionally tuck a fresh mint sprig behind the wheel for aroma; clap the mint between your hands once to release the oils before placing.
