Warm milk and cream

In a medium heavy-bottomed saucepan, combine 4 cups whole milk and 1 cup heavy cream. Warm over medium heat until steam rises and small bubbles form around the edges (do not boil), about 5–7 minutes, stirring occasionally to prevent skin from forming.

Combine dry chocolate components

While the milk warms, whisk together 2 tablespoons unsweetened cocoa powder, 2 tablespoons granulated sugar, and a pinch of fine sea salt in a small bowl. This helps cocoa dissolve evenly.

Temper and melt chocolate

Once the milk mixture is steaming, reduce heat to low. Stir in the cocoa/sugar mixture until dissolved. Add 8 ounces finely chopped bittersweet chocolate and stir constantly with a whisk or wooden spoon until the chocolate has fully melted and the mixture is smooth, about 2–3 minutes. Keep the heat low to avoid scorching.

Add flavoring

Remove the saucepan from heat briefly and stir in 1 teaspoon vanilla extract and 1 pinch sea salt. If using, add 1 teaspoon ground cinnamon, 1 pinch chili or cayenne, and/or 1 teaspoon orange zest now. Return to low heat and warm gently for another minute to let flavors meld; do not boil.

Adjust sweetness and texture

Taste and adjust sweetness if necessary, adding up to 1 tablespoon more sugar if you prefer sweeter chocolate caliente. If you prefer a thicker luxury texture, simmer very gently for 2–3 minutes while stirring; for a lighter texture, serve immediately after warming.

Serve & Garnish

Ladle the hot chocolate into four pre-warmed mugs (about 1¼ cups per serving).

Top each mug with a generous spoonful of whipped cream and/or a handful of mini marshmallows if desired. Finish with a dusting of grated chocolate or ½ teaspoon cocoa powder per cup.

Serve immediately while hot. Stir once before drinking to combine any toppings.
