    Prepare bread

    Spread the room-temperature butter evenly on one side of each bread slice. This will be the exterior for toasting. If you prefer not to butter, you can toast plain or grill with a little olive oil.

    Toast bread

    Heat a skillet or griddle over medium heat. Place bread slices butter-side down and toast 1–2 minutes until golden and crisp. Remove and keep warm.

    Season turkey

    Lay the smoked turkey slices on a plate and sprinkle evenly with 1/2 tsp kosher salt and 1/2 tsp freshly ground black pepper. Gently press so the seasoning adheres. This boosts the peppery profile.

    Dress greens

    In a small bowl toss the arugula (or greens) with 1 tsp olive oil, 1 tsp lemon juice, and a pinch (about 1/8 tsp) of salt and pepper to lightly dress them. This keeps the greens bright and prevents sogginess.

    Assemble condiments

    On the non-toasted side of two bread slices spread 1 tsp mayonnaise on one slice and 1 tsp Dijon mustard on the other. If using whole grain mustard, spread it thinly on top of the Dijon for texture and extra tang.

    Build the sandwich

    Place half the seasoned turkey (about 4 oz) on one prepared bread slice (mayonnaise side). Add one slice of cheese on top of the turkey. Layer 3–4 tomato slices and 1 tbsp thinly sliced red onion over the cheese. Top with half the dressed peppery greens (~1/2 cup). Sprinkle about 1/4 tsp freshly ground black pepper over the tomato and greens for an extra peppery kick.

    Finish and serve

    Top with the second bread slice (mustard side facing in). Press lightly and, if desired, return sandwich to the skillet over low heat for 30–60 seconds per side to melt the cheese slightly and warm the filling. Slice the sandwich in half on the diagonal and serve immediately.

    Optional adjustments

    If you want more peppery heat, add a light smear of cracked black pepper mayo (mix 2 tsp mayo with 1/4 tsp coarse black pepper). For extra juiciness, add a thin layer of avocado (about 1/4 avocado, mashed) between turkey and cheese.
