Prep the ribs
Pat the 1/2 lb rack dry with paper towels. Remove any excess membrane from the bone side if still present by sliding a knife under the membrane and pulling it off.

Season
Combine kosher salt, black pepper, smoked paprika and garlic powder. Rub the spice mix evenly over both sides of the ribs, pressing gently so the rub adheres. Let rest at room temperature for 15 minutes or refrigerate for up to 2 hours to deepen flavor.

Make the marinade
Whisk together olive oil, apple cider vinegar, brown sugar and hot sauce (if using). Brush about half of this mixture evenly over both sides of the seasoned ribs. Reserve the remainder for glazing later.

Low-and-slow finish (oven)
Preheat oven to 300°F (150°C). Place ribs meat-side up in a shallow baking dish or on a rimmed sheet pan; add 1/4 cup water or chicken stock to the pan to keep moisture. Cover tightly with foil and bake for 1 hour to 1 hour 15 minutes, until meat is tender and pulls back slightly from the bone.

Glaze and brown
Remove foil, brush ribs with reserved marinade and then with barbecue sauce. Optional: dot with 1 tsp butter for sheen. Increase oven to 425°F (220°C) or switch to broil. Return ribs, uncovered, for 6–8 minutes until sauce is bubbling and lightly caramelized — watch to avoid burning. Alternatively, finish on a hot grill over medium-high heat for 4–6 minutes, turning once and brushing with extra sauce.

Rest and garnish
Transfer ribs to a cutting board and let rest 5 minutes. Sprinkle with chopped parsley if desired. Cut into individual bones or serving pieces and serve with extra barbecue sauce on the side.
