Pickling Brine

    Sterilize jar

    Wash the jar with hot soapy water, rinse, then place in boiling water for 10 minutes or run through a hot dishwasher cycle. Keep the jar warm until ready to use.

    Rinse the jalapeños. Trim stem ends if desired. For rings: slice crosswise into 1/8–1/4 inch thick rounds. For spears: halve lengthwise and remove seeds to reduce heat. Wear gloves if you have sensitive skin.

    Peel and smash the garlic cloves lightly with the flat side of a knife to release flavor.

Make Brine

    In a small saucepan combine water (1 cup), distilled white vinegar (1 cup), granulated sugar (1 tablespoon), and kosher salt (1 teaspoon).

    Add aromatics to the saucepan: whole black peppercorns (1 tsp), mustard seeds (1 tsp), dried oregano (1/2 tsp), and the smashed garlic cloves (2 pieces). Add the bay leaf and cilantro sprigs here if using.

    Bring the mixture to a simmer over medium heat, stirring until sugar and salt dissolve. Once it reaches a gentle simmer, cook 1–2 minutes to bloom the spices, then remove from heat.

Pack Jar

    Place any remaining aromatics (optional cilantro sprigs or bay leaf) into the bottom of the warm sterilized jar.

    Tightly pack the sliced or halved jalapeños into the jar, leaving about 1/2 inch headspace at the top.

    Pour the hot brine over the peppers, making sure the peppers are fully submerged. Use a clean spoon or small spatula to remove air bubbles; adjust peppers so brine covers them and maintain about 1/4–1/2 inch headspace.

    Wipe the jar rim with a clean towel and seal with a lid.

Short-Term Process or Storage

    For quick use (refrigerator pickles): let the jar cool to room temperature, then refrigerate. Jalapeños will be mildly pickled after 24 hours, develop good flavor in 3 days, and peak at about 1–2 weeks. Store in the refrigerator up to 2 months.

    If you prefer shelf-stable jars, process in a boiling water bath: place sealed jars in boiling water (water should cover jars by 1–2 inches) and boil for 10 minutes (adjust for altitude). Remove and cool on a towel; check seals after 24 hours. Shelf-stable jars keep for up to 1 year.

    Use pickled jalapeño slices on tacos, nachos, sandwiches, burgers, or chopped into salsas and salads. Drain or include some brine for extra tang.
