Cook sausages
Preheat a skillet or grill over medium heat. If using a skillet, add a teaspoon of oil and sear the jalapeño sausages 2–3 minutes per side until browned. Reduce heat to medium-low and continue cooking, turning occasionally, until internal temperature reaches 160°F (71°C), about 8–10 minutes total. If grilling, cook 10–12 minutes, turning until evenly browned and cooked through. Keep warm.

Warm brisket or pulled pork
If using brisket: slice or chop into bite‑sized pieces and warm gently in a saucepan with 1–2 tablespoons of reserved cooking jus or a splash of beef broth over low heat until heated through, 3–5 minutes. If using pulled pork: warm in a saucepan with a splash of BBQ sauce or 1–2 tablespoons of cooking liquid over low heat until heated through, 3–5 minutes. Keep warm separately from sausages.
Bean Seasoning & Finishing

Prepare seasoned black beans: heat 1 teaspoon oil in a small skillet over medium heat. Add minced garlic and cook 30 seconds until fragrant. Add drained black beans, cumin, smoked paprika, salt and pepper. Stir to combine and warm through, mashing about one-quarter of the beans with the back of a spoon for texture, 3–4 minutes. Taste and add lime juice if desired. Keep warm.

Assemble dogs: place a cooked jalapeño sausage in each toasted bun. Spoon a portion (about 2–3 tablespoons) of warmed brisket or pulled pork alongside or over the sausage, depending on preference.

Top with seasoned black beans (about 2 tablespoons per dog), then sprinkle shredded cheddar (about 2 tablespoons per dog) so it melts from the residual heat. Scatter diced onions (about 1 tablespoon per dog) and sliced fresh jalapeños to taste.

Finish with a generous drizzle of yellow mustard (about 1/2 tablespoon per dog). If desired, add chopped cilantro and a few drops of hot sauce.
