Prep & Poach

    Prepare crabs

    If using live crabs, humanely chill in the refrigerator or freezer for 15–20 minutes to sedate them. Rinse the crabs under cold running water, scrub the shells, and remove any gills or debris if desired. If using pre-cooked fresh crabs, rinse and set aside.

    Make poaching liquid

    In a large stockpot, combine 4 liters of water and 3 tbs kosher salt. Add smashed garlic, sliced ginger, halved shallots, bruised lemongrass, bay leaves, and black peppercorns. Bring to a rolling boil over high heat.

    Poach crabs

    Reduce heat to maintain a vigorous simmer. Carefully lower whole crabs into the aromatic poaching liquid. For live or raw whole crabs, simmer 10–12 minutes for medium crabs (adjust 12–16 minutes for larger). For raw crab pieces, simmer 6–8 minutes. If using pre-cooked crabs, warm for 3–4 minutes. The shells should turn bright red and meat should be opaque. Remove crabs and transfer to a tray to cool slightly. Reserve 250 ml (about 1 cup) of the poaching liquid and discard the rest or strain and save for stock.

Sauce & Finish

    Make sauce base

    In a large sauté pan or wok set over medium heat, add the vegetable oil and 2 tbs butter. When the butter is melted and sizzling, add 2 smashed garlic cloves (reserve remaining garlic for garnish if you like) and 1 tbs sliced ginger; sauté 30–45 seconds until fragrant but not browned.

    Stir in fish sauce, light soy sauce, brown sugar, and chili paste. Cook, stirring, until sugar dissolves and sauce bubbles, about 1 minute.

    Add about 120–250 ml (1/2–1 cup) of the reserved poaching liquid to loosen and slightly thin the sauce. Bring to a gentle simmer and reduce for 2–3 minutes until slightly glossy.

    Finish sauce with butter and aromatics

    Lower heat and whisk in the remaining 2 tbs butter, sesame oil, and lime juice until butter is fully incorporated and the sauce is silky. Taste and adjust seasoning: add more fish sauce for salt, lime for acidity, or brown sugar for sweetness.

    Coat crabs

    Add the poached crabs to the pan (or transfer sauce over crabs in a large roasting pan) and toss gently with tongs or spoon so shells and exposed meat are well coated in the sauce. Heat together 1–2 minutes to allow flavors to marry.

    Turn off heat and sprinkle chopped cilantro and sliced green onions over the coated crabs. Dot remaining 0 tbs butter if you desire extra gloss (optional). Serve immediately with steamed jasmine rice and lemon or lime wedges on the side.

Plating & Serving

    Place 1/2 cup steamed jasmine rice on each plate (optional). Arrange a crab or crab pieces on top or alongside. Spoon extra sauce over the crab and rice. Garnish with additional cilantro, green onions, and a lime wedge for squeezing.

    Provide crab crackers, picks, and napkins. Encourage diners to dip meat into the sauce and enjoy immediately while hot.
