    Prepare and marinate seafood

    Pat the shrimp, scallops and fish pieces dry with paper towels. In a large bowl combine 3 tbs olive oil, 2 tbs lemon juice, minced garlic, smoked paprika, dried oregano, red pepper flakes, 1.5 tsp kosher salt and 3/4 tsp black pepper. Add the seafood and toss gently to coat. Cover and refrigerate for 15–20 minutes (no longer than 30 minutes) to allow flavors to penetrate.

    Sauté aromatics and vegetables

    Heat a large heavy skillet over medium heat. Add 2 tbs butter and let melt until foaming. Add the diced shallot and sauté 2–3 minutes until softened and translucent. Add the sliced bell pepper and cook 2 minutes more until slightly softened. Add the halved cherry tomatoes and cook 2–3 minutes until they begin to blister and release juices.

    Cook the seafood

    Increase heat to medium-high. Push the vegetables to the side of the skillet and add the marinated seafood in a single layer (work in two batches if needed to avoid crowding). Sear shrimp 1–2 minutes per side until pink and opaque, scallops 1–2 minutes per side until just set, and the fish pieces 2–3 minutes per side until opaque and flaky. Reduce heat to medium.

    Deglaze and finish sauce

    Pour 1/2 cup dry white wine (or broth) into the hot skillet to deglaze, scraping up any browned bits from the bottom with a wooden spoon. Let the liquid simmer 1–2 minutes to reduce slightly. Stir in remaining 1 tbs olive oil (if desired), lemon zest, chopped parsley and torn basil. Taste and adjust seasoning with sea salt and freshly ground pepper.

    Serve

    Spoon the juicy seafood and vegetables with their sauce over crusty bread, rice or pasta. Serve with lemon wedges on the side. Garnish with extra parsley and an additional drizzle of olive oil if desired.
