Baking the Cake
- 1
Prepare the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2
Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- 3
- 4
Combine Mixtures
Pour the wet ingredients into the dry ingredients. Stir until just combined; do not overmix.
- 5
Bake the Cake
Divide the batter evenly between the prepared cake pans and smooth the tops. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- 6
Cool the Cake
Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, remove from pans and let them cool completely on a wire rack.
Making the Ganache
- 7
Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- 8
Add Chocolate
Remove from heat and add the semi-sweet chocolate chips to the hot cream. Let sit for 5 minutes.
- 9
Stir to Combine
Whisk the mixture until smooth and glossy. Allow the ganache to cool slightly before using.
Assembling and Decorating the Cake
- 10
Layer the Cake
Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of ganache on top.
- 11
Add Second Layer
Place the second cake layer on top of the ganache and press gently.
- 12
Cover with Ganache
Pour the remaining ganache over the top and sides of the cake, spreading it evenly with a spatula.
- 13
Decorate
Garnish the top with fresh raspberries and carefully place the edible gold leaf pieces around for an elegant finish.
