Add Ice
Fill the glass about three-quarters full (approximately 1 cup) with fresh ice cubes. Do not pack the ice tightly; leave room for liquid and fizz.

Pour Pepsi
Tilt the glass to a 45-degree angle and slowly pour 12 oz of chilled Pepsi down the side of the glass to minimize excessive foaming. If you prefer a slightly lighter carbonation, reserve 2 oz of the Pepsi and replace with 2 oz cold sparkling water (see Optional).

Settle
Allow a few seconds for the fizz to settle. If foam rises too high, pause and let it dissipate before topping up.

Gently place a maraschino cherry into the drink and rest a lemon wedge on the rim or squeeze a few drops into the Pepsi for a bright citrus note. Stir gently with a straw once if desired to distribute flavor.

Adjust Carbonation or Strength
If you used the lighter carbonation option, pour 2 oz cold sparkling water into the glass after the Pepsi to preserve fizz while reducing sweetness. Taste and adjust by adding up to 1–2 oz more Pepsi or sparkling water as preferred.

Dispenser Maintenance (optional)
If preparing at a fountain dispenser, mix approximately 1/2 cup Pepsi syrup with the appropriate amount of cold carbonated water per manufacturer instructions to create fresh fountain Pepsi. Follow dispenser calibration and sanitation steps before serving.
