Method

Sandwich

  1. 1

    Prepare bacon

Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top if available. Arrange the 12 bacon slices in a single layer on the rack or directly on the foil. Bake 15–20 minutes until crisp to your liking, rotating the pan once halfway through. Remove bacon to a paper-towel-lined plate to drain and cool. Reserve bacon fat on the foil for disposal.

  2. 2

    Prepare tomatoes

While the bacon cooks, wash and core the 2 ripe tomatoes. Slice them into 1/4-inch (6 mm) thick rounds. Lay the slices on a plate, sprinkle evenly with 1 tsp kosher salt and 1 tsp freshly ground black pepper, and set aside to macerate for 5 minutes. Pat lightly with a paper towel before assembling if excess juice collects.

  3. 3

    Prepare lettuce

Wash and dry 8 lettuce leaves thoroughly (use a salad spinner or pat dry). Tear any oversized leaves so they match the bread size and set aside on paper towels to remove excess moisture.

  4. 4

    Toast bread (optional)

If toasting, lightly butter one side of each of the 8 bread slices with the 2 tbs softened unsalted butter. Heat a skillet over medium heat or use a toaster. Toast buttered sides in the skillet 1–2 minutes per side until golden, or toast in a toaster until lightly browned. Alternatively, leave bread untoasted for a softer sandwich.

  5. 5

    Assemble sandwiches

Lay out 4 bottom slices of bread (buttered/toasted side down if used). Spread about 1 tbs mayonnaise evenly on each top and bottom slice (6 tbs total used across 4 sandwiches). Place 2–3 bacon slices on each bottom slice (3 slices per sandwich gives a hearty BLT). Top bacon with 2 tomato slices per sandwich, then add 2 lettuce leaves per sandwich. Close each sandwich with the top slice of bread, mayonnaise side down.

  6. 6

    Finish and serve

Using a sharp knife, cut each sandwich in half diagonally. Serve immediately while bacon is warm and bread still slightly crisp. Offer extra mayonnaise, tomato slices, or pickles on the side as desired. Makes 4 sandwiches (servings).
