Preparation
Peel the potatoes and cut them into thin strips (about 1/4 inch thickness). Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Drying the Potatoes
After soaking, drain the potatoes and pat them dry with a clean towel.

Frying the Potatoes
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the potato strips in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 5-7 minutes per batch.

Draining Excess Oil
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain any excess oil.

Seasoning
While the fries are still hot, sprinkle them with salt, black pepper, and Greek oregano. Toss gently to combine.

Serving
Transfer the fries to a serving plate and crumble feta cheese on top. Serve immediately.
