Directions for Making Pastitsio

    Prepare the Pasta

    Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Cook the Meat Sauce

    In a large skillet, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until translucent. Add the ground beef and cook until browned. Stir in the tomato sauce, cinnamon, nutmeg, salt, and pepper. Simmer for about 15 minutes.

    Make the Bechamel Sauce

    In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes. Gradually add the milk, whisking constantly until the sauce thickens. Remove from heat and whisk in the eggs and half of the grated Parmesan cheese.

    Assemble the Pastitsio

    In a greased baking dish, layer half of the cooked pasta, followed by the meat sauce, then the remaining pasta. Pour the bechamel sauce over the top and sprinkle with the remaining Parmesan cheese and crumbled feta.

    Bake

    Preheat the oven to 350°F (175°C). Bake the Pastitsio for about 45 minutes or until the top is golden brown. Let it cool for a few minutes before serving.
