    Sauté the Aromatics

    In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

    Cook the Orzo

    Add the orzo pasta to the saucepan and stir to coat in the oil and aromatics. Cook for 2-3 minutes, stirring frequently to prevent sticking.

    Add Liquids and Seasonings

    Pour in the vegetable broth and tomato sauce. Add the dried oregano, salt, and black pepper. Stir well to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 10-12 minutes, or until the orzo is tender and most of the liquid is absorbed.

    Garnish and Serve

    Remove from heat and let it sit for a few minutes. Fluff with a fork, garnish with chopped parsley, and serve warm.
