    Prepare the Chicken

    Preheat your oven to 425°F (220°C). Rinse the organic half chicken under cold water and pat dry with paper towels.

    Season the Chicken

    In a small bowl, mix the olive oil, minced garlic, juice of the lemon, chopped fresh rosemary, salt, and black pepper. Rub this mixture all over the chicken, making sure to get it under the skin for more flavor.

    Prepare the Potatoes

    Wash and cut the potatoes into wedges. Toss them in a bowl with a drizzle of olive oil, salt, and black pepper until evenly coated.

    Roast the Chicken and Potatoes

    Place the seasoned chicken in a cast iron skillet or roasting pan. Arrange the potato wedges around the chicken. Roast in the preheated oven for about 1 hour, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden and crispy.

    Serve

    Remove the chicken and potatoes from the oven. Let the chicken rest for 10 minutes before carving. Serve hot with the roasted potatoes on the side.
