Method
Instructions
- 1
Prepare the Zucchini
Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for about 15-20 minutes to draw out excess moisture. Afterward, squeeze the grated zucchini in a clean kitchen towel to remove more water.
- 2
Make the Mixture
In a large bowl, combine the grated zucchini, crumbled feta cheese, flour, chopped mint, chopped dill, eggs, black pepper, and additional salt if needed. Mix until well combined.
- 3
Form the Patties
Using your hands, form the mixture into small balls or patties, about the size of a golf ball, and flatten them slightly.
- 4
Pan-Fry the Patties
In a large skillet, heat olive oil over medium heat. Once hot, add the patties in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side.
- 5
Drain and Serve
Once cooked, transfer the patties to a paper towel-lined plate to drain excess oil. Serve warm with tzatziki on the side.
