    Prepare Marinade and Marinate Beef

    In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Cut the bistro filet into 1-inch cubes and add to the marinade. Toss to coat and let marinate for at least 30 minutes.

    Prepare Rice

    While the beef is marinating, rinse the uncooked rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and water. Bring to a boil, then cover and reduce heat to low. Cook for 18-20 minutes, or until the rice is tender and the water is absorbed.

    Skewer and Grill Beef

    Preheat the grill to medium-high heat. Thread the marinated beef cubes onto skewers, alternating with bell pepper pieces. Grill the skewers for about 8-10 minutes, turning occasionally until the beef reaches desired doneness.

    Sauté Vegetables

    In a skillet, heat a little olive oil over medium heat. Add the chopped bell peppers and asparagus and sauté for about 5-7 minutes until tender but still crisp.

    Serve

    Fluff the cooked rice with a fork and divide it among plates. Top with sautéed vegetables and grilled beef skewers. Serve immediately.
