Soak/Boil Noodles
Bring a large pot of water to a rolling boil. Add the sweet potato glass noodles and cook according to package instructions (typically 6–8 minutes) until they are tender but chewy. Stir occasionally so they don't stick. Drain the noodles and run under cold water to stop cooking; drain well and cut noodles several times with kitchen scissors (about 6–8 cuts) to shorten them for easier eating.

Mix Sauce
While noodles cook, whisk together light soy sauce, dark soy sauce, sesame oil, sugar, and ground black pepper in a small bowl. Taste and adjust: add up to 1 tsp more sugar or 1/2 tbs more soy sauce if desired. Set aside.

Toss drained noodles with about half of the sauce mixture so they absorb flavor while you stir-fry the other components. Reserve the remaining sauce to finish the dish.

Season Beef
Place the thinly sliced beef in a bowl; add the mirin and 1/2 tablespoon of the light soy sauce from the sauce mixture (or 1/2 tbs soy), and toss to coat. Let sit 5–10 minutes while preparing vegetables.

Quick Stir-Fry
Heat a large nonstick skillet or wok over high heat. Add 1 tablespoon vegetable oil and swirl to coat. Add the marinated beef in a single layer and sear quickly, stirring for 1–2 minutes until browned but still slightly pink inside (be careful not to overcook). Remove beef to a plate and keep warm.

Cook Carrots & Onions
In the same skillet over medium-high heat, add another 1/2 tablespoon oil if needed. Add the julienned carrots and sliced onion, stir-fry 2–3 minutes until they begin to soften and slightly caramelize.

Blanch Spinach
While stir-frying, bring a small pot of water to a boil. Add the spinach and blanch for 20–30 seconds until wilted. Drain well and squeeze out excess water using your hands or a clean towel. Roughly chop or leave whole per preference. Season lightly with a pinch of salt and a few drops of sesame oil; set aside.

Taste and adjust seasoning: add a splash more soy sauce for saltiness, a pinch of sugar for balance, or a few extra drops of sesame oil for aroma.

Transfer japchae to a serving platter or divide among bowls. Sprinkle toasted sesame seeds over the top and drizzle the optional 1 tsp sesame oil if desired. Serve warm or at room temperature.
