Prepare fish

Pat the mahi mahi fillets dry with paper towels. This removes excess moisture so the fish will sear properly.

Make marinade

In a shallow dish or bowl, whisk together 3 tablespoons olive oil, 2 tablespoons fresh lime juice, 2 teaspoons minced garlic, 1 teaspoon ground cumin, 1 teaspoon smoked paprika, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper until combined.

Marinate

Place the dried fillets in the dish and spoon the marinade over them, turning to coat both sides. Let sit at room temperature for 15–20 minutes (or refrigerate up to 30 minutes). Do not over-marinate; acid will begin to firm the flesh if left too long.

Heat pan

Heat a large nonstick or stainless steel skillet over medium-high heat until hot (about 2–3 minutes). Add 1 tablespoon olive oil and swirl to coat. The oil should shimmer but not smoke.

Sear fish

Remove excess marinade from the fillets and season lightly with a pinch of salt and pepper. Place fillets in the hot skillet, presentation-side down. Cook without moving for 3–4 minutes until a golden-brown crust forms.

Flip and finish

Carefully flip the fillets and reduce heat to medium. Cook 2–4 more minutes, depending on thickness, until the internal temperature reaches 135–140°F (57–60°C) for moist, opaque fish. For thicker fillets allow up to 5 minutes. Transfer fillets to a warm plate and tent loosely with foil while you make the sauce.

Lower heat to medium-low and add the remaining 2 tablespoons butter to the same skillet. When melted, add the finely chopped shallot and sauté 1–2 minutes until softened and translucent, scraping up any browned bits (fond) from the pan.

Carefully add 1 tablespoon white wine (or dry vermouth) to deglaze the pan. Stir and scrape to release browned bits; let the wine reduce by half, about 1–2 minutes.

Stir in 1 tablespoon fresh lemon juice, 1 teaspoon capers (if using), the chopped parsley, 1/4 teaspoon salt and 1/4 teaspoon black pepper. Allow the sauce to simmer gently for 30–60 seconds until slightly glossy. Taste and adjust seasoning.

If the sauce is thin, swirl in a small extra pat (about 1 teaspoon) of cold butter off the heat to emulsify and thicken slightly. Spoon the warm sauce over the rested fillets just before serving.

Serving

Plate the mahi mahi fillets and spoon the pan sauce over the top. Garnish with lemon or lime wedges and a scatter of microgreens or chopped parsley. Serve immediately with your choice of sides (rice, roasted vegetables, or a green salad).
