    Prepare fish

    Rinse the whole yellow corvina under cold water and pat dry thoroughly with paper towels, inside and out. Score both sides of the fish with 2–3 shallow diagonal cuts to allow even cooking and better marinade penetration.

    Lightly season inside the cavity and both sides of the fish with kosher salt (about 1 tsp) and black pepper (1/4 tsp). Rub gently so it adheres to the flesh.

    Combine 1 tablespoon light soy sauce, 1 tablespoon rice wine (or mirin), and 1/2 teaspoon sesame oil in a small bowl. Brush or spoon this mixture over both sides of the fish and into the cavity. Let the fish sit at room temperature for 10–15 minutes (or refrigerate up to 30 minutes) to take on flavor. Do not over-marinate, as the fish is delicate.

Breading & Frying

    While the fish marinates, mix 1/2 cup all-purpose flour, 2 teaspoons cornstarch and 1/4 teaspoon ground black pepper in a shallow dish. This light coating helps create a crisp exterior when pan-frying or grilling.

    Heat a large nonstick or cast-iron skillet over medium-high heat. Add neutral oil (about 1 cup) — enough to coat the bottom and come up slightly — and heat until shimmering but not smoking (about 350°F/175°C if using a thermometer).

    Dredge the marinated fish lightly in the flour mixture, shaking off excess. Make sure the scored areas are coated but not caked.

    Carefully place the fish into the hot oil. Fry the fish 3–5 minutes on the first side without moving it to develop a golden crust. Use a spatula to gently check the edge for browning.

    Flip the fish carefully using a spatula (and tongs if needed). Fry the second side 3–5 minutes until golden and the flesh flakes easily at the thickest part. Cooking time depends on the size of the fish (a single yellow corvina about 8–10 oz typically takes ~6–10 minutes total).

    If the fish is thicker and not fully cooked through after frying both sides, lower heat to medium and spoon hot oil over the top (baste) or cover the pan briefly (30–60 seconds) until cooked. The internal flesh should be opaque and separate with a fork.

    Transfer the cooked fish to a plate lined with paper towels to drain excess oil.

Garnish & Sauce

    Make the dipping sauce: in a small bowl combine 1 tablespoon soy sauce, 1 teaspoon rice vinegar, 1/4 teaspoon sugar, and 1/4 teaspoon gochugaru (optional). Stir until sugar dissolves. Taste and adjust: add more vinegar for tang, more soy for saltiness, or a pinch more sugar to balance.

    In a separate small spoon or over the fish, sprinkle 1 teaspoon minced garlic and 1 tablespoon thinly sliced green onion over the drained fish. Lightly drizzle 1/2 teaspoon toasted sesame seeds and a few drops of sesame oil if desired for aroma.

    Serve the fish whole on a platter with the soy-vinegar dipping sauce and lemon or lime wedges on the side. Encourage diners to squeeze citrus over the fish before eating for a bright finish.
