Prepare the fish
Rinse the cleaned mackerel under cold water and pat dry thoroughly inside and out with paper towels. Score the skin on each side with 2–3 shallow diagonal cuts (about 1/4 inch deep) to help the marinade penetrate and to prevent the fish from curling while cooking.

Make the marinade
In a shallow bowl, whisk together 3 tbs olive oil, 2 tbs lemon juice, 2 tsp minced garlic, 2 tbs chopped parsley, 1 tsp dried oregano, 1.25 tsp sea salt, and 1/2 tsp freshly ground black pepper until combined.

Marinate the fish
Place the mackerel in a shallow dish or resealable bag. Pour half the marinade over the fish, rubbing some into the scored cuts and cavity. Reserve the remaining marinade for brushing during grilling. Refrigerate and let sit 20–30 minutes (up to 1 hour) — do not exceed 1 hour to avoid 'cooking' the fish in the lemon juice.
