Southwest Egg Rolls

Prepare the Filling
In a large bowl, combine the shredded chicken, black beans, corn, red bell pepper, green onions, cheddar cheese, cumin, paprika, salt, and black pepper. Mix well until all ingredients are evenly combined.

Assemble the Egg Rolls
Lay a flour tortilla flat on a clean surface. Place about 1/4 cup of the filling mixture in the center of the tortilla. Fold the sides over the filling and then roll it tightly from the bottom up to form an egg roll. Repeat with the remaining tortillas and filling.

Fry the Egg Rolls
Heat the oil in a large skillet over medium heat. Once hot, carefully add the egg rolls in batches, being sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Serve
Serve the Southwest egg rolls warm with ranch dressing on the side for dipping.
