Cut the Curd
After the curd has formed, cut it into small cubes (about 1 inch) using a long knife. Let it rest for 5 minutes.

Cook the Curd
Gently heat the curds to 90°F (32°C) over low heat, stirring gently. Maintain this temperature for about 30 minutes.

Drain the Curd
Line a colander with cheesecloth and carefully pour the curds into it. Allow to drain for about 30 minutes.

Add Salt and Mold
Transfer the curds to a mixing bowl. Add salt and mix gently. Place the curds into cheese molds, pressing gently to form into shape.

Pierce and Age
Using a sterile skewer, pierce the cheese in several places to allow air into the cheese. Place the cheese in a cool, humid environment (around 50°F or 10°C) for 2-3 months to age.
