Bloom flavors
Place the instant coffee granules and unsweetened cocoa powder in a small bowl. Add 1 tablespoon of warm (not boiling) water and stir until dissolved and smooth. This creates a concentrated coffee-cocoa paste to ensure even flavor distribution.
Combine wet ingredients
In a blender or large jar suitable for an immersion blender, combine the heavy cream, sweetened condensed milk, and the coffee-cocoa paste. Blend on low for 10–15 seconds to homogenize.
Add flavorings and whiskey
Add the Irish whiskey, vanilla extract, almond extract (if using), chocolate syrup, and a pinch of kosher salt to the cream mixture. Blend or shake vigorously for 20–30 seconds until fully combined and slightly thickened. Taste and adjust: add an extra 1/2 to 1 tablespoon of chocolate syrup or 1/2 teaspoon vanilla if desired.
Bottle and chill
Pour the mixture through a fine-mesh strainer into a clean 24–32 oz bottle or jar to remove any undissolved particles. Seal tightly and refrigerate for at least 2 hours before serving to allow flavors to meld and the mixture to chill. Refrigerated, it will keep 2–4 weeks; shake gently before each use as natural separation can occur.
Serving suggestion: serve chilled over ice, in coffee, or in cocktails. Shake the bottle well and pour 1–2 oz per serving.
