Beef Patties & Seasoning

    Form Patties

    Divide the ground beef into two equal portions (about 8 oz each). Gently shape each portion into a loose patty about 3.5 to 4 inches in diameter and roughly 3/4 inch thick. Do not overwork the meat; overhandling makes tough patties. Make a shallow dimple in the center of each patty with your thumb to help them cook flat.

    Season both sides of each patty evenly with kosher salt, freshly ground black pepper, and a light sprinkle of Worcestershire sauce. If using, add hot sauce into the patty mix or brush on later.

Cooking Patties

    Heat a heavy skillet or cast-iron pan over medium-high heat until very hot, about 3–4 minutes. If using a griddle, preheat it to 375–400°F (190–205°C).

    Add a small drop of oil to the pan if it is not well-seasoned. Place the patties in the pan without crowding. Cook undisturbed for 3–4 minutes to form a good sear.

    Flip the patties and cook the second side for 2–3 minutes for medium-rare to medium (adjust time for desired doneness). When patties are nearly done (about 30–45 seconds before removing), place two slices of American cheese on each patty. Cover the pan with a lid or tent with foil for 30–45 seconds to melt the cheese thoroughly.

Buns & Spread

    While patties cook, halve the hamburger buns and spread about 1 tsp unsalted butter on each cut side. Toast the buns butter-side down in a separate skillet over medium heat or on the griddle until golden, about 1–2 minutes. Watch closely to avoid burning.

    In a small bowl, mix mayonnaise, yellow mustard, and ketchup until smooth. Spread about 1 tablespoon of this sauce on the bottom half of each toasted bun.

Toppings

    Slice the tomato into 1/4-inch thick slices. Thinly slice the red onion into rings and separate. Rinse and dry the lettuce leaves; trim to fit the buns if necessary.

    Place two pickle slices on top of the sauce on each bottom bun. Add lettuce, a tomato slice, and a few red onion rings.

Assembly & Serve

    Place the hot cheese-topped patties on the prepared bottoms. If using bacon, lay two cooked bacon slices over each patty. Spoon any remaining sauce on the top bun or spread plain as desired, then place the top bun over the burger.

    Serve immediately with fries, chips, or a pickle spear. Enjoy while hot so the cheese is gooey and the bun is crisp.
