Prepare bacon
Preheat a skillet over medium heat. Lay 6 bacon slices in the cold skillet without overlapping. Cook, turning occasionally, until browned and crisp to your preference, about 8–12 minutes. Transfer bacon to a paper-towel-lined plate to drain. Reserve 1 teaspoon bacon fat in the skillet and discard the rest or save for another use.

Toast bread
Spread 1 tablespoon butter evenly on one side of each of the 2 sourdough slices. Place buttered-side down in the warm skillet (use the reserved bacon fat if desired for extra flavor) over medium heat. Toast until golden brown and crisp, about 2–3 minutes per side. Remove and set on a cutting board.

Prepare tomato and avocado
Slice the heirloom tomato into 4–6 even slices. Sprinkle tomato slices with 1/4 teaspoon of salt and 1/8 teaspoon of black pepper to draw out juices and season. Halve the avocado, remove the pit, and slice into 6–8 thin slices while still in the skin; scoop out with a spoon. Toss avocado slices gently with 1/2 teaspoon lemon juice and a pinch of salt to prevent browning and add brightness.

Assemble spread
In a small bowl mix 2 tablespoons mayonnaise with 1/4 teaspoon smoked paprika (optional) and the remaining pinch of black pepper to make a lightly smoky mayo. Taste and adjust seasoning.

Assemble sandwich
Spread the smoked mayonnaise on the unbuttered sides of both toasted bread slices. On the bottom slice, layer lettuce leaf, tomato slices (drain extra juices on a paper towel if very wet), then arrange avocado slices in a single layer. Sprinkle remaining 3/4 teaspoon salt evenly across tomato and avocado layers (use more or less to taste). Top with the 6 slices of crispy bacon, then place the other toast slice mayo-side down to finish.

Finish and serve
Press the sandwich gently, cut in half on the diagonal, and serve immediately while the bacon is still warm and the toast is crisp. Serve with extra mayo for dipping or a side of pickles if desired.
