Method

Preparation

  1. 1

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Chicken

While the pasta is cooking, season the chicken breast with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the chicken for 6-7 minutes on each side or until cooked through. Remove from skillet, let it rest for a few minutes, then slice into strips.

  3. 3

    Prepare the Vegetables

In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion and minced garlic until translucent. Add the sliced wild mushrooms and asparagus pieces. Cook for about 5 minutes until the vegetables are tender.

Sauce Preparation

  1. 4

    Make the Vodka Sauce

Add the vodka to the skillet with vegetables. Cook for about 2-3 minutes, allowing the alcohol to evaporate slightly. Stir in the crushed tomatoes, salt, black pepper, and red pepper flakes. Simmer for 5 minutes.

  2. 5

    Finish the Sauce

Lower the heat and stir in the heavy cream. Allow the sauce to simmer for an additional 5 minutes, stirring occasionally until it thickens slightly.

Combine

  1. 6

    Combine Pasta and Sauce

Add the cooked penne pasta and sliced chicken to the skillet. Toss everything together until the pasta and chicken are well coated with the sauce.

  2. 7

    Garnish

Remove from heat, add chopped fresh basil, and stir to combine. Serve immediately.
