Fried Potatoes

Method

Preparation of Potatoes

  1. 1

Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick, to form fries.

  2. 2

Soak the potato strips in cold water for at least 30 minutes to remove excess starch. This will help in achieving a crispier fry.

  3. 3

After soaking, drain the potatoes and pat them dry with paper towels.

Frying the Potatoes

  1. 4

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Make sure there's enough oil for the fries to float while cooking.

  2. 5

Carefully add the dried potato strips to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 4-5 minutes or until golden brown and crispy.

  3. 6

Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt.

Finishing Touches

  1. 7

In a large mixing bowl, combine the hot fries with the truffle oil, grated Parmesan cheese, chopped parsley, and garlic powder. Toss well to ensure even coating.

  2. 8

Serve immediately while hot, garnished with additional Parmesan and parsley if desired.
