    Sauté the Base Ingredients

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté for about 5-7 minutes, or until the vegetables are softened and the onion is translucent.

    Add Tomatoes and Seasonings

    Stir in the crushed canned tomatoes, vegetable broth, sugar, salt, black pepper, dried basil, dried oregano, and bay leaf. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, allowing the flavors to meld.

Blending and Finishing

    Blend the Soup

    After the soup has simmered, remove the bay leaf and use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender, blending carefully to avoid splatters.

    Add Cream and Garnish

    Stir in the heavy cream and adjust seasoning with additional salt and pepper, if needed. Serve hot, garnished with fresh basil leaves.
