Steak Bites Preparation

    Prepare the Steak

    Trim any excess fat from the sirloin steak and cut it into bite-sized pieces, approximately 1-inch cubes.

    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove from the skillet and place on paper towels to drain. Once cooled, crumble into small pieces.

    Sear the Steak

    In the same skillet, add olive oil and heat over high heat. Season the steak pieces with salt and black pepper. Sear the steak bites in the hot skillet for about 2-3 minutes on each side until browned and cooked to your desired doneness.

    Combine with Bacon

    Once cooked, remove the steak bites from the skillet and mix in the crumbled bacon. Set aside while you prepare the sauce.

Bleu Cheese Sauce Preparation

    Make the Sauce

    In a small saucepan over medium heat, combine the heavy cream, bleu cheese, garlic powder, and Dijon mustard. Stir continuously until the cheese has melted and the sauce is smooth.

    Season the Sauce

    Taste the sauce and season with salt and black pepper to your preference. If the sauce is too thick, you can add a little more cream to reach your desired consistency.

Serving

    Plate the Dish

    Arrange the steak bites on a serving platter and drizzle the bleu cheese sauce over the top. Serve immediately, garnished with additional crumbled bleu cheese if desired.
