Method

For the Prime Rib

    Prepare the Rib

    Preheat your oven to 225°F (107°C). Rub the prime rib roast all over with olive oil, then season generously with kosher salt, black pepper, garlic powder, and fresh rosemary.

    Slow Roast the Rib

    Place the seasoned prime rib on a roasting rack in a baking pan. Insert a meat thermometer into the thickest part of the roast. Roast in the preheated oven until the internal temperature reaches 130°F (54°C) for medium-rare, about 2-3 hours.

    Rest the Meat

    Remove the roast from the oven and tent it loosely with aluminum foil. Let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.

For the Au Jus

    Prepare the Au Jus

    In a saucepan over medium heat, combine the beef broth, red wine, Worcestershire sauce, and fresh thyme. Bring to a simmer and let cook for 10-15 minutes, until slightly reduced. Adjust seasoning if necessary.

For the Yeast Rolls

    Activate Yeast

    In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 5-10 minutes until frothy.

    Make the Dough

    In a large mixing bowl, combine the flour, salt, and milk. Add the activated yeast mixture and mix until a dough forms. Knead on a lightly floured surface for about 8-10 minutes.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in size, about 1 hour.

    Shape and Bake Rolls

    Preheat the oven to 375°F (190°C). Punch down the risen dough and divide into equal pieces. Shape into rolls and place on a greased baking sheet. Allow to rise for 30 minutes. Bake for 15-20 minutes until golden.

For the Honey Cinnamon Butter

    Make the Butter

    In a mixing bowl, combine softened butter, honey, and cinnamon. Mix until well blended and creamy. Serve with the warm yeast rolls.
