Wash and Cut Potatoes
Wash the Russet potatoes thoroughly under cold running water. Pat them dry with a kitchen towel. Cut each potato into long strips, approximately 1/4 inch thick.

Soak the Potatoes
Place the cut potato strips in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which will help them become crispy when fried.

Heat the Oil
In a deep frying pan or a heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a kitchen thermometer for accuracy.

Dry the Potatoes
After soaking, drain the potato strips and pat them dry with paper towels to remove excess moisture. This will help achieve crispy fries.

Fry the Potatoes (First Batch)
Carefully add a portion of the dried potato strips to the hot oil. Fry them for about 4-5 minutes or until they are lightly golden but not fully cooked. Remove them using a slotted spoon and drain on paper towels.

Repeat the frying process with the remaining potato strips. Once all fries have been blanched, let them cool for about 10 minutes.

Increase the heat of the oil to 375°F (190°C). Fry the blanched potatoes in batches for an additional 2-3 minutes or until they are golden brown and crispy. Drain on paper towels again.

While the fries are still hot, sprinkle them with salt, black pepper, garlic powder, and paprika to taste. Toss to ensure they are evenly coated with the seasoning.
