Method

Prepare the Salmon

    Season the Salmon

    Pat the Atlantic salmon fillets dry with paper towels. Season both sides with salt and black pepper.

    Sear the Salmon

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Sear for 4-5 minutes, until the skin is crispy. Flip and cook for another 3-4 minutes until the salmon is cooked through and flakes easily.

Make Roasted Garlic Butter

    Roast the Garlic

    Preheat the oven to 400°F (200°C). Wrap the garlic cloves in foil and roast in the oven for 20-25 minutes until soft and caramelized.

    Prepare the Butter

    In a bowl, mix the softened unsalted butter with the roasted garlic (squeezed from the skins), chopped parsley, and lemon juice until well combined.

Prepare Crispy Brussels Sprouts

    Trim and Cut the Brussels Sprouts

    Trim the ends of the Brussels sprouts and cut them in half.

    Roast the Sprouts

    Toss the Brussels sprouts with olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the oven at 400°F (200°C) for 20-25 minutes until crispy and browned.

Make Whipped Sweet Potatoes

    Cook the Sweet Potatoes

    Peel and chop the sweet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

    Whip the Sweet Potatoes

    Drain the sweet potatoes and return to the pot. Add butter, milk, and salt. Mash and whip until smooth and creamy.

Serve the Dish

    Plate the Meal

    On each plate, place a generous scoop of whipped sweet potatoes, top with a seared salmon fillet, and arrange crispy Brussels sprouts on the side. Drizzle roasted garlic butter over the salmon.

    Serve with fresh lemon wedges on the side for an added burst of flavor.
