Prepare Spicy Braised Chicken

Cook the Chicken
In a medium saucepan, heat olive oil over medium heat. Season chicken thighs with chili powder, cumin, garlic powder, salt, and black pepper. Add chicken to the pan and sear until golden brown on both sides, about 4-5 minutes per side.

Add Broth and Braise
Pour in chicken broth and bring to a simmer. Cover and let cook for about 20-25 minutes until chicken is tender and cooked through. Remove from heat and shred the chicken with two forks.

Assemble Quesadilla
On half of each tortilla, layer shredded chicken, crumbled bacon, cheddar jack cheese, and fire roasted salsa. Fold the tortilla over to create a half-moon shape.

While the quesadillas are cooking, slice the avocado and mix the sour cream with chili powder for flavor.

Once the quesadillas are cooked, cut into wedges, top with sliced avocado, and drizzle with chili sour cream. Serve immediately.
