Mombo Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk together until evenly mixed.

    Combine Wet Ingredients

    In a separate bowl, beat the eggs and then add the milk, vanilla extract, and melted butter. Mix until well combined.

    Combine Mixtures

    Pour the wet mixture into the dry ingredients. Stir gently until just combined. Do not over-mix; the batter should be slightly lumpy.

    Cook the Mombos

    Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of the batter onto the skillet for each mombo. Cook until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

    Keep Warm

    Transfer the cooked mombos to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining batter.

Serving

    Prepare Drinks

    Pour the orange juice and pineapple juice into glasses. Add grenadine to the pineapple juice for a layered effect, if desired.
