Prepare the Salad Base

In a large bowl, add the mixed salad greens and set aside.

Slice Apples
Core and slice the Michigan apples into thin wedges. Add to the bowl with salad greens.

Wash and peel the carrots, then grate them. Add the grated carrots to the salad bowl.

Add Walnuts and Cranberries
Chop the walnuts if they are whole, then add to the salad along with the dried cranberries. Toss the salad gently to combine.
Prepare the Chicken

If you have leftover cooked chicken breast, season it with olive oil, salt, and black pepper. If not, cook the chicken breast by grilling or baking until fully cooked.

Once cooked, let the chicken rest for a few minutes, then slice it into thin strips or cubes.

In a small bowl, whisk together the apple cider vinegar, honey, Dijon mustard, salt, black pepper, and olive oil until well combined.
