Potato Scratchins

Method

Potato Scratchins Preparation

  1. 1

    Prepping the Potatoes

Wash the russet potatoes thoroughly under cold water to remove dirt. Pat them dry with a clean kitchen towel.

  2. 2

    Slicing the Potatoes

Slice the potatoes into thin rounds, about 1/8 inch thick. You can use a mandoline for uniform slices or a sharp knife.

  3. 3

    Seasoning the Slices

In a large bowl, combine the sliced potatoes, olive oil, salt, black pepper, garlic powder, and paprika. Toss until the potatoes are evenly coated.

  4. 4

    Baking the Potato Scratchins

Preheat your oven to 425°F (220°C). Spread the seasoned potato slices in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.

Toppings Assembly

  1. 5

    Adding the Cheese and Bacon

Once the potato scratchins are baked and crispy, remove them from the oven. Immediately sprinkle the shredded cheddar cheese and cooked bacon bits evenly over the hot potato slices.

  2. 6

    Melting the Cheese

Return the baking sheet to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

  3. 7

    Serving the Loaded Potato Scratchins

Remove from oven and let cool for a couple of minutes. Drizzle sour cream over the top and sprinkle with chopped green onions before serving.
