Preparing the Ingredients

    Prepare the Salmon

    Pat the salmon fillets dry with paper towels and season both sides with salt and black pepper. Set aside.

    Prepare the Vegetables

    Halve the cherry tomatoes, finely slice the shallots, and mince the garlic cloves. Set aside.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.

Cooking the Dish

    Grill the Salmon

    Preheat the grill to medium-high heat. Place the salmon fillets on the grill and cook for about 5-6 minutes per side, or until the salmon flakes easily with a fork. Remove from the grill and set aside.

    Roast the Cherry Tomatoes and Shallots

    In a skillet over medium heat, add a splash of olive oil. Add the shallots and cook until translucent, about 2-3 minutes. Add the cherry tomatoes and minced garlic, sautéing for another 3-4 minutes until the tomatoes are blistered. Season with salt and pepper.

    Prepare the Lemon Herb Butter Sauce

    In a small saucepan, melt the butter over low heat. Stir in the lemon zest, lemon juice, and chopped parsley. Season with salt and pepper to taste. Keep warm on low heat.

    Combine Gnocchi

    Add the cooked gnocchi to the skillet with the cherry tomatoes and shallots, gently tossing to combine.

Serving the Dish

    Plate the Dish

    To serve, place a portion of the gnocchi and cherry tomato mix on each plate. Top with a grilled salmon fillet and drizzle the lemon herb butter sauce over the top.

    Garnish

    Garnish with additional fresh parsley if desired and serve immediately.
