Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the beer (or sparkling water) until the batter is smooth and has a consistency similar to pancake batter.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Batter the Fish
Dip each fish fillet into the batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered fish into the hot oil. Fry for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

Prepare the Potatoes
Peel the russet potatoes and cut them into thick fries. Soak in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Fry the soaked and drained potatoes in batches for about 5-6 minutes until they are tender but not browned. Remove and drain on paper towels.

Increase the oil temperature to 375°F (190°C). Fry the potatoes again for 2-3 minutes until they are golden brown and crispy. Remove and season with salt.

Mix Ingredients
In a small bowl, combine the mayonnaise, dill pickles, capers, and lemon juice. Mix well.

Add salt and black pepper to taste. Adjust flavors as needed.
