Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) to ensure it's hot enough to create the molten center.

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust with cocoa powder, shaking out the excess. This will help the cakes release easily once baked.

Cake Making

  1. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring between each interval until fully melted and smooth.

  2. 4

    Whisk Eggs and Sugar

In a separate bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is pale and fluffy.

  3. 5

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture. Add the vanilla extract and a pinch of salt, then gently fold in the all-purpose flour until just combined.

  4. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

Baking

  1. 7

    Bake the Cakes

Place the filled ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  2. 8

    Cool Briefly

Remove the ramekins from the oven and let them cool for 1 minute before inverting onto plates.

Serving

  1. 9

    Serve

Carefully invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream, and add fresh berries and a dusting of powdered sugar if desired.
