Prepare the Chicken
Preheat your grill to medium-high heat. Brush the chicken breasts with olive oil and season both sides with salt and black pepper.

Cook the Bacon
In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove from heat and drain on paper towels.

Slice the Avocado
While the bacon is cooking, slice the avocados in half, remove the pit, and scoop the flesh out with a spoon. Cut into thin slices.
Grilling

Grill the Chicken
Place the chicken breasts on the preheated grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

Add Cheese
During the last minute of grilling, place a slice of aged Swiss cheese on each chicken breast and close the grill lid to melt the cheese.

Assemble the Sandwich
Once the chicken is cooked and the cheese is melted, remove from the grill. On each chicken breast, layer the cherry chutney, crispy bacon, avocado slices, and drizzle with pesto aioli.

Serve the Cherry Chutney Chicken warm, with extra cherry chutney and pesto aioli on the side if desired.
