Chicken Preparation

    Marinate the Chicken

    In a bowl, mix olive oil, garlic powder, salt, and black pepper. Add the chicken breasts and coat them well. Allow the chicken to marinate for at least 30 minutes.

    Grill the Chicken

    Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest.

Cherry Chutney Preparation

    Cook the Chutney

    In a saucepan over medium heat, combine the pitted cherries, chopped onion, brown sugar, apple cider vinegar, grated ginger, cinnamon, and salt. Stir to combine and let simmer for about 20 minutes, or until the mixture thickens. Remove from heat and let cool.

Assemble the Sandwich

    Prepare the Toppings

    Cook the applewood smoked bacon until crispy. Drain on paper towels. Slice the avocado.

    Layer the Ingredients

    On the bottom half of each gluten-free bun, spread 1/2 tablespoon of pesto aioli. Place the grilled chicken on top, followed by a slice of aged Swiss cheese, a layer of cherry chutney, crispy bacon, and sliced avocado. Top with the other half of the bun.
