    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened and the onion is translucent.

    Add Garlic

    Stir in the minced garlic and sauté for another 1-2 minutes, until fragrant.

    Incorporate Tomatoes

    Add the canned whole tomatoes (including their juice) to the pot. Break the tomatoes apart with a spoon and stir to combine.

    Pour in Broth

    Pour in the vegetable broth and bring the mixture to a boil.

Cooking

    Add Seasonings

    Once boiling, add the dried basil, oregano, salt, black pepper, and sugar. Stir to combine and reduce the heat to low. Let it simmer for 20-25 minutes, stirring occasionally.

    Blend the Soup

    After simmering, remove the pot from heat. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender, and blend until smooth.

    Stir in Cream

    Return the pureed soup to low heat and stir in the heavy cream. Cook for an additional 5 minutes, stirring gently.

Serving

    Garnish and Serve

    Ladle the tomato bisque into bowls and garnish with fresh basil. Serve warm with crusty bread, if desired.
