    Prepare the Avocado

    Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Dice the avocado into bite-sized pieces.

    Wash the cucumber, slice it in half lengthwise, and then slice into thin half-moons.

    Combine Salad Ingredients

    In a large salad bowl, combine the diced avocado, sliced cucumber, roasted yellow tomatoes, dried cranberries, grated Parmesan cheese, and mixed salad greens.

Cheesy Garlic Crouton Preparation

    Prepare the Bread

    Preheat the oven to 375°F (190°C). Cut the bread slices into cubes.

    Mix Crouton Ingredients

    In a mixing bowl, combine the bread cubes, olive oil, garlic powder, grated Parmesan cheese, salt, and pepper. Toss until the bread cubes are evenly coated.

    Bake the Croutons

    Spread the coated bread cubes on a baking sheet in a single layer. Bake in the preheated oven for about 10-12 minutes or until golden and crispy, flipping halfway through.
