Method

Cooking the Grains

    Cook Quinoa

    Rinse 0.5 cups of quinoa under cold water. In a pot, combine the rinsed quinoa with 1 cup of water and bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed. Fluff with a fork and set aside.

    Cook Farro

    In a separate pot, combine 0.5 cups of farro with 2 cups of water. Bring to a boil, then reduce heat and simmer for about 25-30 minutes until tender. Drain any excess water and set aside.

Preparing the Chicken

    Season and Cook Chicken Breast

    Season 4 oz of chicken breast with 1 tbs of olive oil, 0.5 tsp of garlic powder, 0.5 tsp of paprika, salt, and black pepper to taste. Heat a skillet over medium heat and cook the chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let rest before slicing.

Assembling the Salad

    Combine Salad Ingredients

    In a large bowl, toss together 4 oz of mixed salad greens, 0.5 cups of halved cherry tomatoes, and 0.5 cups of diced cucumber. Drizzle with 1 tbs of olive oil and 1 tbs of balsamic vinegar. Season with salt and black pepper to taste, then toss again to combine.

Serving

    Plate the Dish

    On a plate, serve a portion of the cooked quinoa and farro mix, topped with the sliced chicken breast. Add the prepared salad on the side.
