Method

Steak

  1. 1

    Prepare the Steak

Season the sirloin steak with salt and black pepper on both sides.

  2. 2

    Cook the Steak

In a skillet, heat olive oil over medium-high heat. Once hot, add the steak and cook for 4-5 minutes on each side for medium-rare. Adjust time for desired doneness.

  3. 3

    Rest the Steak

Remove the steak from the skillet and let it rest for a few minutes before slicing.

Crispy Truffle Fries

  1. 4

    Prepare the Potatoes

Wash and cut the russet potatoes into thin strips (fries).

  2. 5

    Heat the Oil

In a deep pot, heat vegetable oil to 350°F (175°C).

  3. 6

    Fry the Potatoes

Fry the potato strips in batches for about 5-7 minutes or until golden and crispy. Remove and drain on paper towels.

  4. 7

    Season the Fries

Drizzle truffle oil over the fries and sprinkle with salt while still hot.

Greens Salad

  1. 8

    Prepare the Salad

In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber.

  2. 9

    Dress the Salad

In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Pour over the salad and toss gently.

Béarnaise Sauce

  1. 10

    Make the Vinegar Reduction

In a saucepan, combine shallots, white wine vinegar, and tarragon. Simmer until reduced by half, then strain and set aside.

  2. 11

    Melt the Butter

In a separate saucepan, melt the unsalted butter over low heat until completely melted.

  3. 12

    Whisk the Sauce

In a mixing bowl, whisk the egg yolks with the vinegar reduction. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until thickened.

  4. 13

    Combine Ingredients

Slowly drizzle in the melted butter while whisking continuously until fully combined. Season with salt and pepper to taste.
