Ravioli Dough

    Make the Dough

    In a large bowl, combine the all-purpose flour and salt. Create a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs using a fork until a dough begins to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Filling

    Prepare the Filling

    In a skillet over medium heat, cook the shrimp until pink and opaque, about 3-4 minutes. Remove from heat and chop into small pieces. In a bowl, combine the ricotta cheese, chopped shrimp, crumbled bacon, chopped spinach, salt, and black pepper. Mix until well combined.

    Roast the Tomatoes

    Preheat the oven to 400°F (200°C). On a baking sheet, toss the cherry tomatoes with olive oil, salt, and black pepper. Roast for 20-25 minutes until they are blistered and caramelized.

Garlic Cream Sauce

    Make the Garlic Cream Sauce

    In a saucepan over medium heat, melt some butter and add the minced garlic. Sauté until fragrant, about 1 minute. Add the heavy cream, salt, and black pepper. Stir in the grated Parmesan cheese until melted and smooth. Simmer for 5 minutes until thickened.

Assemble and Cook Ravioli

    Roll out the Dough

    After resting, divide the dough into 4 pieces. Roll each piece out thinly using a pasta machine or rolling pin.

    Fill the Ravioli

    Place teaspoons of the filling spaced apart on one sheet of dough. Moisten the edges with water, then cover with another sheet of dough. Press down to seal and cut out the ravioli shapes.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes until they float. Remove with a slotted spoon.

    Plate the cooked ravioli, top with roasted tomatoes, and drizzle with garlic cream sauce. Garnish as desired and enjoy!
