Prime Rib Preparation

    Marinate the Prime Rib

    In a large bowl, mix the Michigan stout beer, beef broth, salt, and black pepper. Place the prime rib roast in the marinade, ensuring it's fully submerged. Cover and refrigerate for at least 4 hours or overnight for best results.

    Cook the Prime Rib

    Preheat your oven to 325°F (160°C). Remove the prime rib from the marinade and pat it dry with paper towels. Place it on a roasting rack in a pan and roast for about 1.5 to 2 hours, or until it reaches an internal temperature of 135°F (57°C) for medium-rare. Let it rest for 15-20 minutes before slicing thinly.

    Sauté the Onions

    While the prime rib is resting, slice the yellow onions thinly. In a large skillet, heat the butter and olive oil over medium heat. Add the onions, salt, and black pepper. Cook, stirring occasionally, for about 15-20 minutes until the onions are caramelized and golden brown.

    Assemble the Sandwich

    Slice the brioche buns in half and lightly toast them if desired. Place slices of the cooked prime rib on the bottom half of each bun. Top with sautéed onions and a slice of Swiss cheese. Place the top half of the bun on top.

    Serve the sandwiches warm with au jus on the side for dipping.
