Basil Pesto

Flatbread Assembly

Method

Chicken Marinade

  1. 1

    Prepare the Marinade

In a mixing bowl, combine Founders All Day IPA, olive oil, garlic powder, salt, and black pepper to create the marinade.

  2. 2

    Marinate the Chicken

Add the chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

Basil Pesto

  1. 3

    Blend the Pesto Ingredients

In a food processor, add the fresh basil leaves, pine nuts, grated Parmesan cheese, and minced garlic.

  2. 4

    Add Olive Oil and Season

With the food processor running, slowly drizzle in the olive oil until all ingredients are well combined and a smooth paste forms. Add salt to taste.

Flatbread Assembly

  1. 5

    Preheat Oven

Preheat your oven to 220°C (428°F).

  2. 6

    Cook the Chicken

Cook the marinated chicken on a grill or in a skillet over medium heat until fully cooked, about 7-10 minutes per side. Once done, let it rest before slicing into strips.

  3. 7

    Spread the Pesto

Spread a generous amount of the house-made basil pesto over each piece of flatbread.

  4. 8

    Assemble the Flatbread

Top the pesto with sliced marinated chicken, roasted yellow tomatoes, and shredded mozzarella cheese.

  5. 9

    Bake the Flatbreads

Place the assembled flatbreads on a baking sheet and bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.

  6. 10

    Serve

Remove from the oven, let cool slightly, then slice and serve warm.
